Tawa Pulao

Ingredients
Cooked rice 3 cupsOil 2 tablespoonsCumin seeds 1/2 teaspoonPotato boiled, peeled and cubed1 Cauliflower florets boiled and chopped4-5 Green capsicum finely chopped1 mediumGinger paste 1/2 teaspoonRed chilli powder 1 teaspoonPav bhaji masala 2 1/2 teaspoonsTomatoes chopped2 mediumSalt to tasteGreen peas boiled and crushed1/2 cupLemon juice 2 tablespoonsFresh coriander leaves chopped4 tablespoons
Method :-
Step 1
Heat the oil in a deep non stick pan. Add cumin seeds and when they change colour, add the potato, cauliflower, capsicum and ginger paste. Step 2
Stir and sauté til the raw smell of ginger disappears. Add red chilli powder and sautéStep 3
Add two teaspoons pav bhaji masala and stir well. Add the tomatoes and salt and stir.Step 4
Cover and cook till the vegetables become soft. Keep aside a few green peas, add the remaining to the pan and stir.Step 5
Cover and cook for two minutes. Mash the vegetables lightly. Add a little water if the mixture is too dry. Add the rice, lemon juice and mix well.
Step 6
Cover and let the rice get heated through. Garnish with the reserved green peas, coriander leaves and sprinkle the remaining pav bhaji masala and serve hot.
